Slowmov a small independent coffee roaster and café in the neighbourhood Gràcia, more exact it´s located on the street Luis Antúnez 18. The area is quiet even though it´s positioned in between the two busy streets Gran de Gràcia and Via Agusta.
Carmen Callizo and François Justet founders of Slowmov, run their business wanting to balance work and leisure. A space where things are not rushed, things are aloud to take its time.
Coffee roasting is the main business at Slowmov, they work directly with the coffee producer abroad. The chain is short and they know the owner and his estate where the beans are sustainably grown.
They import the green coffee beans directly from the coffee cultivator to Barcelona and they roast the beans in the locale of Slowmov. They always work with 100% Arabic beans. Slowmov collaborate with the world famous coffee expert Antoine Netien from Coutume in finding the right producers and to perfect the roasting.
On my visit François gives me an introduction to where the coffee comes from, the different branches of the coffee tree / Coffea by showing me these incredibly beautiful books on coffee, its origins, different beans, where and how they are cultivated. His knowledge is really incredible and genuine.
After he guides me through the different stages of their coffee production. First the coffee beans in their pure state, green/beige.The green coffee beans smells of wheat to me, which François explains is because the coffee beans don´t start to smell like “coffee” until they are roasted.
The beans come in the typical coffee bean bags but have an extra protection, a special plastic bag that breathes but to not catch any flavour or smell to destroy the high quality.
Once in the shop they roast the beans in their Giesen coffee roaster, depending on the coffee (variety, altitude, density, use,…) they adapt to one or another type of roasting to get best out of the beans. Afterwards they let the beans cool and letting the coffee rest before they are stored in tight containers.
When used high quality beans the roasting is lighter, because there is no need to burn the bean to cover up that the quality and taste is poor (Hey normal coffee from the supermarket!). The taste buds dance when the sweet coffee hits them, flavours like caramel, peanut and sugar cane can be found.
Also in the café Slowmov they promote local producers and artisans and their craftsmen ship of different kinds. We can find organic and locally produce from brand like; Im-perfect that produces marmalade from left over fruit, organic wine from Penedés, grape-juice from Baixas Lehnberg, coffee from French Coutume- pioneers of French specialty coffee.
